Gai Choy Fried Rice

Recipe from
An authentic favorite with a spike of peppery gai choy
Serves: 4-6

Prep Time



2 cups of pre-cooked or day-old rice cold
6 large shrimp, cut into small pieces
3 eggs, beaten with splash of soy sauce and crushed white pepper
½ red bell pepper, chopped
3 cloves of garlic, minced
1 tablespoon minced ginger
4 green onions, chopped
1 package Jade Gai Choy, washed and cut into small pieces
Cooking oil
Seasoning: salt, soy sauce, chicken stock and lastly sesame oil (add it in when you switched off the fire/heat).


  1. Heat oil in wok, when heated, stir-fry beaten eggs until cooked. Dish out and set aside.
  2. Heat oil in wok, when heated, add in garlic and the stem part of Gai Choy, fry well.
  3. Add in shrimp and bell pepper, stir-fry well.
  4. Lastly, add in the leafy part of Gai Choy and season with some salt.
  5. Then, add in the rice and stir well.
  6. Add in cooked eggs and continue stirring. Add in remaining seasoning to taste and stir-fry. Serve immediately.
