Add some crunch to your baby bok choy with cashews.
3 packages Jade Baby Bok Choy or your favorite Jade item
2 tablespoons olive oil
1 cup chopped whole green onions
3 cloves chopped garlic
½ teaspoon dark sesame oil
½ cup chopped, roasted, salted cashews
Salt to taste
Rinse baby bok choy, separate larger leaves from base, and trim holding the smaller leaves together.
Heat olive oil in a large sauté pan on medium high heat. Add onions, then garlic, then bok choy. Sprinkle with sesame oil and salt. Cover, and let the baby bok choy cook down for approximately 3 minutes.
Remove cover and lower heat to low. Stir and let cook (1-2 minutes) until the bok choy is cooked. Gently mix in cashews.
